When a new restaurant opens in Scottsdale, there's always a lot of excitement. Some live up to the buzz, while others take time to find their footing. After hearing so many positive comments about Vilva’s Indian Cuisine in Troon North, just steps from the Pinnacle Peak Trailhead, my wife Connie and I knew we wanted to see what everyone was talking about.

What made this visit especially interesting wasn't the restaurant itself—it was who was joining us.

While Connie and I have always enjoyed Indian cuisine and have visited many Indian restaurants throughout the Valley, my mom has never considered herself an Indian food fan. In fact, she typically avoids it altogether. Convincing her to join us took a little persuasion, and I'll admit, I wasn't expecting the evening to change her opinion.

From the moment we walked through the doors, Vilvas made a strong first impression.

Our server, Vikki, greeted us warmly and guided us through the menu with genuine enthusiasm. He answered questions confidently, offered thoughtful recommendations, and found that perfect balance between being attentive and allowing us to enjoy the evening without interruption. Great service often goes unnoticed because it simply feels natural, and that's exactly how this experience unfolded.

Then the food began arriving.

Every dish that came to the table was beautifully presented, colorful, and aromatic. Each bite showcased fresh ingredients and carefully balanced spices that enhanced the flavors rather than overpowering them. It's clear that considerable attention is paid not only to the cooking itself but also to the presentation, creating a dining experience that feels both elevated and approachable.

But the moment we'll remember most had nothing to do with us.

My mom ordered the lamb chops.

She approached the dish with more curiosity than confidence, unsure if Indian flavors would suit her taste. After her first bite, she paused, smiled, and quietly said, "Oh."

A few bites later came, "Oh my."

Then simply, "Wow."

Connie and I couldn't help but laugh as we watched her reaction unfold. Every few minutes, she discovered something new she loved, and by the middle of dinner, she looked at us and said something neither of us expected to hear.

"Okay... I'm a fan of Indian food now."

For someone who had spent years believing Indian cuisine simply wasn't for her, it was about the highest compliment a restaurant could receive.

The biggest surprise, however, came as we finished our meal.

Without hesitation, she looked across the table and asked, "Can we come back next week?"

That single question said more than any review ever could.
