There are plenty of restaurants in Scottsdale that want to be noticed.

The Ends doesn't seem particularly interested in being just another one of them.

Tucked into Old Town Scottsdale at 7137 E. Stetson Drive, The Ends has created a restaurant around a very specific philosophy: real ingredients, bold flavors, global inspiration and absolutely no industrial seed oils.

But here's the thing:

You don't have to care about seed oils to have a reason to visit.

Because the food is what makes The Ends interesting.

🌎 A MENU THAT TRAVELS

The Ends takes its inspiration from the way the late Anthony Bourdain (the movie TONY comes out this weekend) traveled and ate.

Not necessarily by recreating traditional dishes exactly as they were served somewhere else, but by taking inspiration from the places, cultures, and meals that make an impression.

The restaurant describes the menu as a collection of flavors and memories from around the world — from a back alley in Tokyo to a roadside pit in Texas and a family kitchen in Laos. (The Ends)

That's why the menu can feel a little unexpected.

You can start with Hamachi Crudo, move into Tommy's Biscuits, order Brisket Burnt Ends, and then find yourself looking at a Bison Ribeye or a Wagyu NY Strip.

It's not locked into one cuisine.

Big flavors. Quality ingredients. Fire, fat, and technique.

🍽️ WHAT'S COMING OUT OF THE KITCHEN?

There are already several dishes that have become associated with The Ends.

🧈 Tommy's Biscuits

These may be one of the restaurant's signature starters.

The current menu serves them with fermented honey, seasonal jam, and grass-fed butter. They're listed at $15 on the dinner menu. (The Ends)

And judging from the number of diners who mention them, these aren't your grandmother's biscuits.

🔥 Brisket Burnt Ends

Texas-style brisket burnt ends are served with apple cider coleslaw and are currently $22.

It's exactly the kind of dish that illustrates what The Ends is doing: taking something familiar, cooking it with serious attention to flavor, and fitting it into a much broader menu. (The Ends)

🍣 Crispy Egg Yolk Nigiri

This is where things get interesting.

Instead of traditional fish nigiri, The Ends serves soy-cured egg yolk, gochujang aioli, furikake, crispy ginger, and eel sauce.

🥩 Bison Ribeye & Wagyu NY Strip

And then there's the meat.

The current menu includes a Wagyu NY Strip with bone marrow butter and Bourdain's Style Mash for $78, along with a Prime Beef Filet and a 40-ounce Bone-In Tomahawk priced at $195. (The Ends)

For anyone who wants to make an evening of it, the Tomahawk is obviously designed to be a centerpiece.

THEN THERE'S TOMAHAWK TACO TUESDAY

One of the more unusual recurring experiences at The Ends happens every Tuesday.

It's called Tomahawk Taco Tuesday.

The restaurant takes a massive tomahawk steak and turns it into a shared taco experience for the table.

The current price is $125, and the restaurant describes it as a meal meant to be shared. (The Ends)

It's a pretty clever combination:

High-end steakhouse centerpiece + tacos + group dining.

And it's exactly the sort of thing that fits The Ends' personality.

It's not trying to be traditional.

It's trying to be memorable.

🍸 DON'T SKIP THE BAR

The food gets most of the attention, but the cocktail program deserves a look too.

The Ends' current cocktail menu includes drinks such as Impeccable Arm Candy, Say Less, Curious By Nature, Rules Don't Apply and No Second Chances, with prices generally in the $23–$25 range. (The Ends)

There's also a zero-proof cocktail program for those who want something without alcohol.

And if you're looking for a reason to arrive early, The Ends runs Happy Hour every day from 4–6 p.m.

That includes half-price wine by the glass and bottle, along with special food offerings and cocktails. Current happy-hour options include Tommy's Biscuits for $8, Crispy Egg Yolk Nigiri for $8, Hamachi Crudo for $18, and a selection of $14 cocktails. (The Ends)

That's actually a pretty compelling way to get introduced to the restaurant without committing to a full steak-and-cocktails evening.

THE ROOM

The Ends occupies the former Kazimierz Wine & Whiskey Bar space in Old Town, but you'd be forgiven for thinking you walked into something completely different.

The atmosphere leans sexy, modern and energetic, with warm wood tones, greenery and a design that feels more like a modern dining club than a traditional Scottsdale steakhouse.

And that energy is intentional.

The restaurant describes itself as a place where “the energy never dies.” (The Ends)

That can be part of the appeal — although it's worth noting that some diners have mentioned that the restaurant can become quite loud during busy periods.

If you're looking for a quiet dinner where you can whisper across the table, this probably isn't it.

If you want dinner to feel like an event, that's a different story.

🍴 THE FORKING SCOTTSDALE TAKE

What I find most interesting about The Ends isn't simply that it's seed-oil-free.

It's that the restaurant has managed to make that philosophy part of a much bigger story.

You can talk about nutrition.

You can talk about tallow.

You can talk about premium beef.

But ultimately, none of that matters if the food isn't good.

And The Ends has built its menu around dishes that are designed to be craveable first and philosophical second.

Biscuits.

Burnt ends.

Nigiri.

Tomahawk steak.

Tacos.

Bourdain-inspired mashed potatoes.

It's a strange collection on paper.

But that's precisely the point.

The Ends isn't trying to fit neatly into a category.

It's a restaurant for people who want to eat their way around the world without leaving Old Town Scottsdale.

And that's a pretty fun idea.

If you're already interested in seed-oil-free dining, The Ends should absolutely be on your Scottsdale restaurant list.

But even if you're not thinking about seed oils when you walk through the door, there's enough going on here to make the restaurant worth exploring.

Go hungry.

Order something you've never tried.

Share a few dishes.

And maybe save room for the Tommy's Biscuits.

🍴 THE FIRST LOOK

The Ends isn't for everyone — and that's probably exactly how they like it.

It's loud. It's energetic. It's unapologetically meat-forward. It's globally inspired. And it has a very clear point of view about how food should be prepared.

But Scottsdale doesn't need another restaurant trying to appeal to everybody.

Sometimes the most interesting restaurants are the ones that know exactly what they want to be.

And The Ends definitely seems to know where it's going.
